Polenta & Tofu Lasagna

I went to a restaurant during my lunch hour today with some co-workers. I had been there before but had forgotten about it. I had the best lunch that was also healthy! It was called Dairy-Free and Wheat-Free Lasagna. It was made with polenta for the "noodles", and tofu ricotta for the "cheese". It also had pomodoro sauce, herbs, and some veggies. I am going to try to come up with a recipe and make it myself... yum!
