Good Weekend... and Some Lasagna

This weekend I went to a party in Albany. It was especially great because I didn't go alone. I got a gaudy new sequined giraffe top for the party... and I wasn't even the worst dressed! We all had fun I think. A lot of nice people, and even tolerant of different beliefs.

Mom and Grandma seem to like Ed... mom says, "he's a keeper!"

I started my Spanish II class tonight. Strange that the instructor was Colombian, my boyfriend also is, so was a girlfriend and a husband of a couple members of the class... what a coincidence since there were only 7 people, or so, in the class!

I also finished The Abs Diet book this weekend, which a friend from work made me read. Actually, I didn't read the main book, but the companion book. It sounds very much like the Core diet but much more lenient. For example, you can eat lowfat dairy instead of just fat-free. I did try to recreate the tofu and polenta lasagna last week and it came out pretty good! Here's the recipe I created:

Polenta & Tofu Lasagna (re-creation of Park & Orchard's- Rutherford, NJ)

Preheat oven to 400 degrees.

Make Tofu Ricotta:
1 lb. organic firm tofu
juice of 2 lemons
2 tsp olive oil
2 heaping tsp garlic
2 tsp italian seasoning
pinch of crushed red pepper

Mix ingredients together in bowl with fork.

Make Pomodoro Sauce:
28 oz course ground tomatoes
3tsp garlic
2 tsp olive oil
1 c. chopped onion
1 Tbsp chopped fresh oregano
2 Tbsp chopped fresh parsley
handful chopped fresh basil
1/3 bag fresh baby spinach
1 cup cauliflower

Mix ingredients together in separate bowl.

Other ingredients:
2 lbs polenta, sliced into slabs,
ff chedder, shredded (I actually used lowfat cheese when I made it)

Layer sauce, polenta, and tofu ricotta in 2 casserole dishes sprayed with cooking spray. Cover with foil and cook at 400 degrees for 30 minutes. Take out and sprinkle shredded chedder on top. Cook uncovered another 5 minutes or until cheese melts.

That's about it for now. I must get to bed as my first audit is tomorrow as an internal ISO auditor!

Polenta & Tofu Lasagna

I went to a restaurant during my lunch hour today with some co-workers. I had been there before but had forgotten about it. I had the best lunch that was also healthy! It was called Dairy-Free and Wheat-Free Lasagna. It was made with polenta for the "noodles", and tofu ricotta for the "cheese". It also had pomodoro sauce, herbs, and some veggies. I am going to try to come up with a recipe and make it myself... yum!

Boredom Setting In

I have been so bored the last couple of days. I don't really know why. Nothing has changed. I spent 2 hours at the gym yesterday just so I could watch Dogma on the Comedy Channel. Tonight, I am too tired to go, yet there is nothing on TV and I am not tired enough to sleep. I even missed yoga.

I am also semi- addicted to my message boards and found out there's a knitting thread that I never knew about until a search engine was finally added a few days ago.

Can't wait for tomorrow night when there's very good TV on... Biggest Loser!

Pretty Good, Relaxing Weekend

I am happy that I had a pretty good workout today, but not happy that I am apparently eating too much of the healthy foods I am eating. Hopefully tomorrow will be better for that. Also, I am looking forward to yoga-lates tomorrow.

Yesterday I went to Wegmans for dinner where I relaxed in a big stuffed chair upstairs and knitted. Friday night I had a nice night out in various parts of Manhattan with my man- from Tribeca and Soho, all the way to the Upper East Side.

Got a voice mail yesterday from a friend that has been MIA for several weeks. Thank god she called someone finally. We were all worried. I haven't gotten a call back from my return call, but hopefully we can catch up soon.

Congrats to my cousins who recently adopted a very cute pup named Remy, whose picture I was sent in a thank you note for the poncho I sent up to her.

At The Zoo

I thought my weekend was going to be ridiculously boring since I have 3 days off and absolutely nothing to do and I didn't want to spend much money. Well, I did my usual grocery shopping on Friday night, so I didn't end up spending the majority of my Saturday on that. So Saturday, I ended up shopping in the city (more like browsing) and spent a surprising small amount of money, which was good. That was after a great breakfast with my man. I invited Mom down and we went to the Bronx Zoo. Turns out that with the little traffic there was, it was only about 20 minutes away! My favorite animals there were the monkeys (all types) and the snow leopard. Anyway, one more day for my not-so-boring weekend. I am gonna relax and continue cleaning my house (which I had to do extensively last night before Mom came) and maybe get a pedicure. Hopefully, I will end up refreshed for work Monday. Hmmm... I think I will go browse Target tonight.
