Lavender Lemonade



I made this tonight from the June 2000 issue of Cooking Light and the food grade lavender I bought at a spice table at the Lobster Festival in Maine. It tastes like a great lemonade from a fair with a gourmet scent and subtle lavender taste to it. Here's the recipe:

4 cups water, divided
1/4 cup chopped fresh lavender leaves
2/3 cup sugar
1 cup fresh lemon juice (about 6 lemons)

1. Bring a cup of water to a boil. Combine the water and lavender in a bowl and steep for 30 minutes, then drain.
2. Combine 3 cups of water and sugar in saucepan. Bring mixture to a boil and cook 1 minute until sugar dissolves.
3. Combine lavender water sugar syrup, and lemon juice in a pitcher. Cover and chill. Serve over ice.

Yield 5 one cup servings. 115 calories. 0 grams fat.
